For a Standard Actuated setup, how do I work out the wired connection before buying a switch? Most pictures in newer threads seem to show different routers.

Identify the supplied router and follow its wiring instructions. Starlink’s third-party networking guide describes the Ethernet adapter for the Gen 2 router. Don’t copy a Router 3 diagram onto a different kit.

And adding a switch is a different decision from replacing the router’s routing function?

Yes. Draw what you want to connect and what each device will do. Only consider bypass if the design calls for your own router to take over that role.
